    1. Clean the quinoa drain and keep aside.

  2. I used slow cooker to prepare soup you can use pressure cooker as well.

  3. Add quinoa, onion, garlic and chopped veg to cooker. Add vegetable stock as well. Add salt. When you add salt be careful as vegetable stock contains salt as well.

    1. Finally add a tsp of oil. Stir and cook in slow cooker for 1 hour.
  4. Once it done add lime juice, pepper and coriander leaves.

  5. Serve hot..
