The balti sauce is beautifully spiced, but not overly spicy, and the chicken pieces are cooked to perfection to recreate a delicious Indian dish. Chicken Balti is a medium spiced curry - but you can add or remove chillis depending on your spice preference. You can make double the batch of this and freeze for a lazy dinner later in the month, or just eat it over a couple of evenings - which I tend to do! - Heat the oil in the wok. Throw in the unions and fry until they are golden brown.

- Add cinnamon stick, cardamoms, peppercorns, cumin seeds, ginger, garlic, garam masala, chili powder and salt. Lower the heat and cook for 5 mins.
- When cooked put half the ingredients into blender to make into puree.
- Add the chicken pieces, cover the wok with lid. Check occasionally and stir fry for at least 7 mins or until the spice mixture has completely penetrated the chicken pieces.
- Add the yogurt in.
- Lower the heat and cover the wok with lid. Cook very gently for about 20 mins.
- Finally, add lemon juice, green chilies and coriander and slices of pepper and serve at once.
