But tahini can get pricey at the grocery store, and it's sometimes bitter or rancid after its long wait on. Tahini is a super creamy, rich vegan paste made by finely grinding roasted sesame seeds until buttery smooth. In this recipe, I add a large handful of fresh chopped parsley to make a popular Egyptian version of tahini sauce we call tahini bqaudoonis or tahini with parsley. Grind meat, parsley and onions in the meat grinder using the finest disk.
Instructions to make Kafta with Tahini (meat with sesame paste):
- Mix all the meat ingredients together until you get the texture of a dough
- Spread the meat evenly in a baking tray
- Put the tray in a preheated oven at 200c for around 15 mins (until the meat in cooked)
- In a separate bowl, mix all the sauce ingredients with a blender until you get a smooth mixture (not too thick, not too runny)
- When the meat is cooked, spread the sauce on top of it (make sure you cover all the surface) and then put it back in the over for ~10 minutes (don’t let it dry)
- Once the meat is ready with the sauce, melt the butter in a pan and fry with it the pine nuts until they’re gold
- Pour the melted butter on top on the sauce and garnish with parsley.
- Enjoy it!
Alternatively finely dice parsley and onion. Add salt, spices (besides baharat you are Pour sauce over kofta. If it does not cover, mix some water with a bit of tahini, stir into smooth paste and add so that the sauce reaches the top of. Having never bought the Chinese sesame paste/sauce, just wondered if someone knew offhand if they are the same and can be used interchangeably. I haven't tried Chinese sesame paste yet, but tahini is available in both raw and toasted forms from many suppliers e.g.
