- Get BASE:
- Make ready 1 cup CHIPITS Mint Chocolate Chips
- Make ready 1/2 cup Butter Softened
- Make ready 1 1/4 cup Graham Wafer Crumbs
- Make ready 1 cup Flaked Coconut
- Take 1/2 cup Finely Chopped Walnuts (THIS IS OPTIONAL. I DON'T ADD CAUSE OF ALLERGY TO NUTS)
- Get FILLING:
- Prepare 2 cup Icing Sugar
- Get 1/4 cup Softened Butter
- Prepare 3 tbsp Milk
- Take 2 tbsp Custard Powder
- Prepare 1 tsp Mint Extract
- Take 1 Several Drops Of Green Food Coloring (THIS IS OPTIONAL. I DON'T ADD CAUSE OF ALLERGY)
- Make ready GLAZE:
- Prepare 3/4 cup CHIPITS Mint Chocolate Chips
- Get 2 tsp Vegetable Oil (I use canola or olive oil)
I am in love with these bars. FILLING: In small bowl, blend icing sugar, butter, milk, custard powder, mint extract and several drops of food colouring. GLAZE: Melt mint chocolate chips with vegetable oil over hot water (or in microwave). I've updated the text slightly and added headings but the recipe remains the same.
Steps to make MINT CHOCOLATE NANAIMO BARS. NUT & DYE FREE:
- BASE: Melt 1 cup mint chocolate chips with 1/2 cup butter in a saucepan over low heat. Stir in graham wafer crumbs & coconut. (You can add finely chopped walnuts if you want). Press evenly into 9-inch square pan. Chill for 30 minutes.
- FILLING: Blend Icing sugar with 1/4 cup softened butter, milk, custard powder & mint extract. (You can add several drops of green food coloring if you want)
- GLAZE: Melt remainder of mint chocolate chips with oil in a bowl set over simmering water. Spread evenly over filling. Chill until completely set. Makes 20 Bars (Suggested serving)
This is my first time making mint Nanaimo bars and this recipe is amazing. Uses a lot of chocolate but is so worth it. I'm a mint lover and changed the recipe in the slightest but you won't be disappointed with the end result. Mix together the butter, milk, confectioners' sugar, custard powder, mint extract and green food colouring for the second layer of the mint recipe and spread over the cooled base layer. For the third and final layer melt the chocolate over hot (not boiling) water.
