Once you've finished roasting a chicken, it's so easy (and so delicious) to use the pan drippings to make a luscious gravy to pair with dinner. Those drippings are like little flavor bombs holding the essence of every spice and herb you used to roast your chicken and then infused with your side vegetables and they are the key to a really good homemade gravy. Sprinkle with seasonings and rub on both sides. Turn on a multi-functional pressure cooker (such as Instant Pot(R)) and select Saute function and high heat. This is EXCELLENT gravy and the more seasoning that you had on your chicken the better the gravy is.
