This is a Memon Akni recipe that is very popular in Leicester. Chicken Akni I've listed Chicken Akni a few times in my meal plans and I've promised to post it, so here it is, finally. Lightly brown the onion then add chicken pieces and brown. Cover and continue to cook on medium heat until rice is cooked and all the liquid has cooked away.

- In oil fry onion till golden brown then add ginger garlic paste and cumin seeds fry them on medium high flame then add tomatoes

- Then add potatoes and little water and cover with the lid once potatoes are tender then add left over chicken gravies… I had qorma and achari chicken and add chickpeas at the same time.
- Stir fry on high flame and once oil separates add soaked rice mix well and then add water and let it cook for a while. When water evaporates cover the lid turn the flame to low and let it cook for 20-25 minutes
- Serve it with onion and yogurt…..
Take off heat and leave covered to steam. Akhni or biryani, is a spiced meat dish made in one pot with layers of rice and meat, topped with browned onions. Mutton is often used, but chicken makes a fabulous akhni. In pot add about ½ cup or more oil. In a large pot, in medium to high heat, heat the oil and add the onions, cardamom pods, cinnamon sticks, star anise and fry and stir until the onions are golden brown.
