I like to take a shortcut here by using my onion tomato masala instead of sautéing onion, tomato from scratch which would add more steps. Unlike other Pulao Recipes, this recipe uses a approach of sautéing the soaked Basmati Rice with sliced capsicum, onion, curd and other basic spices and then steam cooking it in pressure cooker. This process results in deeply flavorful and aromatic rice. Pulao or Pilaf or Pilau refers to rice (usually Basmati) cooked with spices and vegetables.
Steps to make Pepper Peas pulao:
- Wash and Soak rice in water for 30 minutes.
- Heat oil, add cinnamon, cardamom, cumin, peppercorns, bay leaves and cloves. Do not burn the spices. Add sliced onion and sauté for two minutes on a medium flame. Add ginger garlic paste and sauté for another one minute. Add peas, mix well.
- Add 4 cups of water and let it boil. Add salt to taste. Drain the rice and add it in the water and cook. When the rice is 70% cooked, cover the pan with tight lid and keep the fire on very low and let it cook for 5 minutes.
- This is the stage to cover the pan with lid and on slow fire.
- Serve hot with raita
