The ingredients needed to make Stuffed Jalapeños:
- Take 16 large jalapeños
- Get 1 cup shredded Mexican cheese
- Prepare 1 can black beans, drained & rinsed
- Get 2 tbsp chopped green onions
- Make ready 1/2 tsp fresh minced garlic
- Get 1/2 tsp ground cumin
- Prepare 1/2 tsp chili powder
- Make ready 1 fresh sqeezed lime
- Take 2/3 cup cooked white rice
Instructions to make Stuffed Jalapeños:
- In a mixing bowl, combine all ingredients except the peppers. Make a lengthwise slit down each pepper, leaving the stem intact; carefully remove ribs and seeds. Fill each pepper with 1 tbsp of mixture.
- Heat grill on one side and leave other side unheated. Place the peppers on a sheet of aluminum foil and place on cool side of the grill.
- Cover grill and cook for 8-12 minutes or until the peppers have softened and the cheese has melted. (You can also broil the peppers in the oven.)
