  1. Start by sprinkling the peaches with brown sugar & liquor. Toss lightly. Let macerate for about 2 hours. Longer is ok.
  2. Melt butter & pour into 9x13 pan.
  3. Whisk or sift together the flour, baking powder, granulated sugar & spices.
  4. Drain the peaches in a collander over a bowl.
  5. Put peach juice in a measuring cup. Add milk or cream to equal 3/4 cup. Add vanilla extract.
  6. Stir liquid into flour mixture to make batter. Pour batter into pan on top of melted butter. Do not stir. Tilt pan to spread batter.
  7. Toss peaches & blue berries together. Pour over batter. Try for even distribution. Do not stir.
  8. Bake in a preheated 350° oven for 30 minutes. Cobbler is done when top is golden brown & center does not jiggle.

This spectacular cobbler is filled with peaches but it's the topping that's magical. Boiling water is poured over the crust and cinnamon-sugar mixture on top. As it bakes something magical happens and the topping hardens somewhat. Melt butter in bottom of baking dish. Mix milk, sugar, flour and baking powder; pour over butter.
