- Get 2 Spring Onions *sliced diagonally

- Prepare 2 servings Freshly Cooked Rice
- Prepare Shichimi (Japanese Chilli Spice Mix) *OR Ground Chilli
- Get <Sauce>
- Take 3/4 cup Dashi Stock *OR 3/4 cup Water & 1/2 teaspoon Dashi Powder
- Get 1 teaspoon Sugar
- Prepare 2 tablespoons Mirin
- Take 2 tablespoons Soy Sauce
You can try to make aburaage (I don't love deep-frying at home), but most people buy already fried aburaage. Deep fried tofu, or abura-age, is used in soups, one pot cookery, noodle dishes, and in many other ways. It can also be delicious all by itself as a topping on a bowl of rice (domburi). Deep fried tofu can be purchased at most Asian food stores, but it is easily made at home, and all that you'll need is a wok for the deep frying and a colander for rinsing and draining.
Steps to make Abura-age (Thin Fried Tofu) & Egg Rice Bowl:
- Wrap Abura-age with paper towel and heat in microwave for 30 seconds. Then press to remove excess oil. Cut into small pieces. *Note: If you don’t have the microwave, soak in hot water is alternative option.
- Place Water, Dashi Powder, Sugar, Mirin and Soy Sauce in a frying pan or saucepan, and bring the boil over medium high heat. Add sliced Spring Onion and Abura-age, cook until Spring Onion is soft.
- Pour over lightly whisked Eggs but DO NOT stir. Cover with a lid until the egg is softly cooked.
- Half fill a bowl with Freshly Cooked Rice and cover it with the Abura-age & Egg mixture. Sprinkle with Shichimi (Japanese Chilli Spice Mix) and enjoy.
Abura Age is a traditional Japanese food that is made from tofu, which has been deep fried in two stages at two different temperatures. It often appears in miso soup, is the main ingredient for making inarizushi and is also the featured ingredient that gives kitsune udon (fox udon) its name. Aburaage is a type of deep fried tofu most popularly used in inari sushi and as a topping/side in noodle dishes. It absorbs liquid readily like a sponge and much like tofu, it takes on flavour very easily. That makes it is a versatile and delicious ingredient.
