Pad Prik Khing or Pad Prik King is one of the entrees that we can find in most of Thai restaurant. It's stir-fry green beans with the red chili paste and a choice of meat. It's a spicy dish, but yet has some sweet tastes in it.
Steps to make Gai Pad Prik Gaeng (Pad Prik King):
- Cut chicken into bite sized cubes and season to taste.
- Set stove to low heat and add oil.
- Add in red curry paste. Let simmer 20-30 seconds.
- Increase stove heat to high. Add chicken, fish sauce, sugar, and garlic.
- When chicken is cooked, add green beans and kaffir leaves. Cook until beans are done.
- Serve with Jasmine rice and enjoy!
I love to eat my Pad Prik Khing with steamed rice. Prik Khing is also spelled multiple ways. Thai write พริกขิง only one way, but in karaoke Thai, using the Roman alphabet, there are several. Prik Khing, the one I use, seems to be the most popular name. There is also Prik King (yikes), Phrik King and Phrik Khing, the least bawdy.
