Brush with the egg yolk and bake until golden brown about 20 to 25 minutes, but do check as different ovens cook with very different results sometimes.
  3. Cool almost completely before putting onto wire rack to finish cooling. You can slightly reheat this or eat it cold with brandy butter or a festive custard or cream. Enjoy.

Now I freeze cranberries while they are in season so that I can make it year-round. Quite literally the best bake I have ever created. While waiting for the dough to prove, grate the marzipan. Drain the cranberries in a sieve and press down on the berries a little so that some of the liquid comes out.
