Steps to make Rongoboti Rui:
- Heat mustard oil and add the dry red chilli, cinnamon, cloves, bay leaves, peppercorns and cardamom.
- Once the garam masalas changes colour add onion paste and ginger garlic paste and saute over medium flame
- After 2-3 minutes add chilli powder and turmeric powder and mix it well
- Add the chopped tomatoes. And fry till the oil sides. (Add little water at regular intervals to avoid burning)
- Add mustard seed paste and poppy seed pasteband cook for about 3-4 minutes
- Add curd and give it a good mix.
- Add the fried fish and salt and sugar to taste and coat the fish with the gravy and cook for about 4minutes at low flame
- Now add a cup of water and cover the pan with a lid bring it to boil and let the gravy reduce. Cook for 7mins
- Now check the gravy and reduce as required.
- Adjust seasoning.
- Turn off the flame. Garish with beated curd.
- Tastes best with steamed rice.
