- Mix all ingredients of the meat ball and form small balls of a marble size
- Sauté onions and garlic in two tablespoons cooking oil then add chopped carrots
- Put chicken stock and put it in a boil
- Add slowly the meat balls in the boiling soup add more water if needed
- When the meat ball floats the meat is cooked.
- Add the misua noodles and wait for it to cook for 5 minutes
- Put off the fire and add the chopped onion springs. Put salt and pepper to taste.
The other wingman in this recipe is the tomato broth. And a final burst of acidity works really well with this Albondigas Soup. Albondigas (or albondiguillas) is the name for Spanish meatballs. And while you may not find them gracing a dinner table, they are still commonly found around Spain, just a little.
