- Make ready 2 tbsp Lemon juice
- Get 2 tbsp Curd
- Prepare 1 tsp Sugar

- Make ready 1/4 tsp Black salt
- Take Few ice cubes
- Make ready For Curd:
- Prepare 2 cups Hung curd
- Get 2-3 tbsp Powder sugar
- Make ready 1 pinch salt
- Get 3 tbsp Green mint chutney
- Take For Sweet and sour orange chutney :
- Prepare 600 ml Orange juice
- Take 6 tbsp Sugar
- Take 5 pieces Black pepper corns
- Make ready 2 pieces Cardamom
- Make ready 2 cloves
- Prepare 1 piece star anise
- Take 1 inch Cinnamon Stick
- Make ready 1/4 tsp + 1 pinch Black salt
- Make ready 1/4 tsp Nut meg powder
- Make ready For Garnishing :
- Make ready few Grilled paneer slices
- Take as needed Thin julienne carrots (3 cm)
- Take as required Thin julienne beetroots (3 cm)
- Prepare as required Julienne citrus zest (3cm)
- Prepare as required Pomegranate seeds
- Make ready some Mint leaves

Instructions to make Mastani Chat:
- Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks.
- Bring a blender jar, add green chillies, garlic, sugar, ginger and salt, blend this. Now add mint leaves, coriander leaves, lemon juice, curd, black salt and ice cubes, blend into smooth mixture. Pour this into a glass jar. Green mint chutney is ready.
- In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.
- Making Tikki: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
