- Prepare 2 E-Fu Noodles
- Take hotbed chives/chives
- Prepare small amount of straw mushrooms
- Get 1 slice ginger
- Get 2 tsp oyster sauce
- Take 1 tsp light soya sauce
- Take 1 tsp dark soya sauce
- Get 1.5 cup boiled hot water
- Take 1/2 tsp sugar
Instructions to make Chinese E-U Noodles with straw mushroom 幹燒伊麵:
- Boiling water throw in the E-Fu noodles for 30secs, take it out and rinse in cold water. If cooked too long noodles will break while stir fry. These noodles has been fried for storage. If you gonna buy in Market please make sure ones u buy dont have an overdue oily smell which means been stored too long.
- Mushroom slightly cut a mark. You can use a new pot of boiling water but i dont wanna waste i use the same pot. When water boiling add in the ginger, 30secs later add in straw mushroom and boil for 1 min. By doing this, it will remove some of the strong grassy taste of this mushroom. Then take it out rinse it out and slice it.
- High Med Heat, little oil and pan fry the mushrooms until slightly golden brown. Add in around 1.5 cup of boiling water. Add 2tsp oyster sauce, 1 tsp light & dark soya sauce, 1/2 tsp of sugar. Taste sauce if bland add in more oyster sauce. Boil for 2 mins then throw in noodles.
- Avoid breaking noodles and scoop from bottom to top. Mix well and the noodles will absorb the sauce. When water dried up add in hotbed chives and mix well for 1 to 2 mins.
- Done!
