- Take 1/2 cup hung curd
- Get 2 tbsp coriander leaves, finely chopped
Then it is fermented and steamed at the time of serving. We call this safed dhokla aka white dhokla. Because on occasion we make yellow colored dhokla where chana dal is used. When the dhokla is steaming, make the green chutney.
Instructions to make Red Velvet Rava Dhokla:
- Firstly, in a large mixing bowl take rava.
- Also add 1/2 cup curd,1/2 cup beetroot pulp, ginger and chilli paste, salt and sugar.
- Mix well to form a thick batter.Add extra curd if required.
- Cover and keep aside for 30 mins so that rava absorbs moisture.
- Further add water as required and mix well.
- Uncover and add Eno fruit salt.
- Mix gently till the batter turns frothy.
- Grease a round cake tin with oil.
- Pour the batter in greased cake tin and tap it two times to remove any air bubbles present in it.
- Immediately steam the dhokla batter for 20 mins on medium flame or till the dhokla gets cooked completely.
- Now cool the dhokla for 5 mins and then de mould it.Spread hung curd on the dhokla with a offset spatula.
- Prepare the tempering by heating oil.
- Further add mustard seeds, cumin seeds, sesame seeds and Hing.
- Once the mustard seeds splutter add in curry leaves and red chilli.
- Sauté for a while and once the tempering splutters spread the tempering over prepared dhokla.

Take all ingredients in a blender and make into a smooth paste. Now make the tempering Add some rava / sooji. add the pureed ginger and chilli. squeeze in some lemon juice.
