- Add crytal sugar, stir-fry till the sugar melts and turn to golden brown, add spring onion, ginger and chili pepper, i also add a star-anise.
- Add soy sauce and wine, and 600ml hot water, lid on, simmer for 1.5 hrs.
- After 1.5 hrs. lid off. turn up the heat, stir fry to concentrate the sauce. then it's done!
