All in a bowl minus the tortilla and replace the rice with quinoa. - Put the quinoa on the plate. Arrange the grilled chicken in the centre of the plate. Pour the sauce over the chicken. Garnish with some more Coriander leaves and stems. You will be left with some quinoa that you can use for another salad.
