- While shrimp is being cooked in the lemon juice dice onion, jalapeno, cucumbers, and tomato (remove seeds from tomatoes and cucumbers so they wont turn soggy later on)
- Remove cilantro leaves from stem.
- When shrimp are ready, mix all ingredients together. Add remaining lime juice or to taste. Add salt and pepper.
- Top with avocado (optional). Serve with crunchy tostadas, tortilla chips or crackers.
