- Wash and add the bitterleaves cook untill the bitter taste of the leaves no more there and serve with the smoked peppered chicken.
Once, the Egusi is well cooked, stir in the spinach. Adjust the seasoning if necessary and voila your Egusi soup is ready!. Serve with your choice of swallow like Eba, Amala, Semovita, Pounded yam, Fufu, and like I said earlier if you are an hardcore like I am you can serve over Rice. To prepare the Spinach Fufu, all you need is spinach or any other leafy vegetable such as kale, ugu, green amaranth and a binder to make it moldable. I served the Spinach Fufu with Sunflower Seeds "Egusi" Soup which is alternative Egusi Soup prepared using sunflower seeds.
