- Toss vegtables, pasta, and mozzerella.
Bring a pot of salted water to a boil. Drain and place the pasta in a bowl of ice water. Stir the pasta a couple of times to separate the pasta. Toss the pasta with the remaining olive oil. For the red wine vinaigrette: Combine all ingredients into a container with an air-tight lid and shake vigorously to mix.
