My own family in Japan never knows this dish, I guess. I learned 'Cottage Pie' by seeing my husband's mother cooking it and I altered it to my way. Now I am writing down this recipe for my children so that they can cook their mother's Cottage Pie one day.

- Make ready 1 tablespoon Canola Oil
- Prepare 1 Onion *finely chopped
- Make ready 1-2 cloves Garlic *finely chopped
- Make ready 1 Carrot *cut into Peas & Corn size
- Take 1 Celery Sticks *finely chopped
- Prepare 500 g Beef Mince
- Prepare 1 (*about 200g) Beef Steak *cut into 1.5cm pieces
- Take Salt & Black Pepper
- Make ready 2 tablespoons Plain Flour
- Take 1 cup Beef Stock
- Take 2 tablespoons Tomato Paste
- Prepare 1 tablespoon Worcestershire Sauce (Lea & Perrins)
- Take 1/4 cup Frozen Peas
- Take 1/4 cup Frozen Corn
- Make ready <Mashed Potato>
- Get 800 g to 1kg Potatoes *peeled & chopped
- Take Salt & Pepper
- Get 30 g Butter
- Prepare 1/2 cup Milk
There are many variations of the recipe, but the defining ingredients include minced or ground beef with onions (and sometimes other vegetables) in. And cottage pie has to be near the top of the autumn hit list! This cottage pie has a rich tomatoey beefy base, and a sweet potato topping for the ultimate autumn flavours. I make this ahead of time, usually at the weekend when I have a bit more time, and pop it in the fridge.
Instructions to make My Family’s Cottage Pie:
- Heat Oil in a frying pan over medium-high heat. Cook Onion, Garlic, Carrot and Celery for 2-3 minutes. Add all Beef and cook, stirring and breaking up lumps, for 5 minutes.
- Add the Flour and cook, stirring, until combined, then add Stock, Tomato Paste and Worcestershire Sauce. Bring to the boil and reduce heat to simmer, stirring occasionally, cook until sauce thickens. Add Peas and Corn, season with Salt and Pepper.
- Meanwhile, cook Potatoes in a separate saucepan of salted water until tender. Drain well. Return to the saucepan and add Butter. Use a potato masher to mash until smooth. Add Milk and stir until well combined. Taste and season with Salt and Pepper.
- Preheat the oven to 220C. Spoon the mixture into a large baking dish. Cover with the mashed potato and use a fork to spread over and make a pattern.
- Bake in the preheated oven for 15-20 minutes or until mashed potato is slightly browned. Serve immediately.
You can prepare the whole pie ahead (or just the mince). Cool, then keep chilled in the fridge. Serve my Super-Easy Cottage Pie with some freshly cooked veggies, like broccoli, carrots and green beans or why not carb-load with some buttery garlic bread!
