In a large Dutch oven or heavy-bottomed pot over medium heat, warm the olive oil until shimmering. Add the chopped onion, bell pepper, carrot, celery and ¼ teaspoon of the salt. Peel and chop the sweet potatoes into bite-sized chunks, then place onto a baking tray. Sprinkle with a pinch each of cayenne, cumin, cinnamon, sea salt and black pepper, drizzle with oil then toss to coat.
Steps to make Chilli (full of veg):
- Start by chopping all fresh veggies into small cubes. Then brown mince in olive oil and then add onion. Cool till browned then add fresh veggies. Cook till soft then add all other ingredients and leave to simmer for an hour or so. I like to add extra chilli to mine once served but 1 chilli will do if you have children eating it too. I like to serve my chilli with steamed rice, guacamole, jalapeños, tortillas, cheese and sour cream. I also sprinkle fresh coriander and spring onion on mine.
Add peppers, mushrooms, onion,celery, and garlic. Add beans and tomatoes with all their juices and bring to a gentle simmer. Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers.
