In a large bowl, combine the calamari, shrimp, scungili. Remove from water and place in a bath of cold water to stop the cooking. Do the same for the shrimp. (Or purchase frozen cooked shrimp -defrost in the refrigerator). Place the seafood into a colandar in a bowl to drain, cover with wrap and place in the refrigerator until chilled and well drained.
Steps to make Shrimp and squid salad:
- Season the shrimps and squid (cut into rings) with salt, pepper for an hour
- Panfry the squid and shrimps until just cooked
- Keep the shrimp and squid in the fridge to keep cool
- Quarter the cherry tomatoes, cut the olive into rings
- Mix all ingredients with extra virgin olive oil, salt, pepper, garnish with some fresh basil leaves, enjoy😋
Using a slotted spoon, transfer the shrimp to the ice water. Return the pot of water to a boil and add the squid. Tender squid is so delicious and it goes really well with vinaigrette, and it's one of my favorite ingredients in my Seafood Salad (even though I didn't include it today). Just like shrimp, steam the squid in sake until no longer opaque. If you can get sashimi-grade scallop, use it raw in this Seafood Salad.
