Strictly speaking, pesto is a generic term for anything that's made by pounding or grinding, something I take great liberty with on SK (see: walnut pesto, almond pesto) but basil pesto, pesto alla genovese, is so. You can totally use a store-bought pesto, but if you have a few extra minutes and the right ingredients, homemade pesto is sooo easy to make! In the summer in particular, I usually have a ton of basil so I end up making (and sometimes freezing) pesto. Pine nuts are the traditional way to make pesto, but I usually opt for my walnut basil pesto.
Instructions to make When you love pesto&pasta:
- Mix in a grider all the pesto ingredients or with a pestel in a bowl (i did mine with a pestle but it took some time to make it smooth)
- Boil the spaghetti (or the pasta of your choice) with 2 min shorter than indicated on pack
- Mix pasta with pesto.
- Put a basil leaf on top to look good. Enjoy!
I LOVE pesto and it really sucks that when you go out to eat or buy pre-made pesto, it's pretty much always made with parmesan cheese. So for us vegans, this rules out a lot of dishes we could otherwise enjoy. So to get my rich and creamy pesto fix, I make my own at home. I have a few different ways of making pesto, but I wanted to share this. These recipe steps apply irrespective of what type of pesto you are using - basil, rocket/arugula, spinach etc - there's a nice list of options in my homemade pesto recipe.
