To get started with this recipe, we must prepare a few components. You can have beignets using 8 ingredients and 9 steps. Here is how you cook that.

The ingredients needed to make Beignets:
  1. Get 1 1/2 cups milk

They are traditionally prepared right before consumption to be eaten fresh and hot. Variations of fried dough can be found across cuisines internationally; however, the origin of the term beignet is specifically French. Beignets are closely related to a fritter or funnel cake. They are usually yeasted and raised doughs, but we skipped the yeast to create a super-simple and quick version.

Instructions to make Beignets:
  1. Add the lemon juice to the milk and let sit for 5 minutes
  2. Combine the milk mix with the hot milk, then add the yeast and sugar. Whisk it all together and see it aside for about 10min to let the yeast activate.
  3. Combine the flour, baking soda, and salt in a mixing bowl. Give it a stir, then add milk mixture.
  4. Using a dough hook, or wooden spoon, mix for about 3-4 minutes, or until you have a tacky dough. Then cover the bowl in cling film or a damp tea towel and let sit for 1hr
  5. Once it's doubled in size, dump it onto a well floured surface
  6. Roll out and trim into small rectangles to form the Beignets. I used a pizza cutter which worked really well
  7. Heat a pot of cooking oil to 180c (350 f) and place the beignets into the oil. If you're lucky they'll turn themselves, but if not turn them with a spoon
  8. Remove and drain on a rack with paper towels
  9. Dust with lots of icing sugar, and I love mine with my passionfruit curd. I've done a recipe for that too. You've gotta try it

Beignets were also brought to Louisiana by the Acadians. These were fried fritters, sometimes filled with fruit. Today, the beignet is a square piece of dough, fried and covered with powdered sugar.
