The beignets reminded me of the ones from the original Cafe du Monde in New Orleans. I didn't feel the flavor was too bland as some readers suggested, but it does require more powdered sugar then the recipe calls for. I'll probably add a little vanilla to enhance the flavor next time.

  4. Using a dough hook, or wooden spoon, mix for about 3-4 minutes, or until you have a tacky dough. Then cover the bowl in cling film or a damp tea towel and let sit for 1hr
  5. Once it's doubled in size, dump it onto a well floured surface
  6. Roll out and trim into small rectangles to form the Beignets. I used a pizza cutter which worked really well
  7. Heat a pot of cooking oil to 180c (350 f) and place the beignets into the oil. If you're lucky they'll turn themselves, but if not turn them with a spoon
  8. Remove and drain on a rack with paper towels
  9. Dust with lots of icing sugar, and I love mine with my passionfruit curd. I've done a recipe for that too. You've gotta try it
