Authentic guacamole doesn't contain fillers and unnecessary ingredients. All you need is avocados, onion, tomatoes, cilantro, jalapeno pepper, lime juice, garlic and salt. Avocados - good guacamole starts with good avocados so use the best you can find. This fresh guacamole has all the goods: ripe avocados, pico de gallo, a bit of lime or lemon juice, a dash of hot sauce and seasonings.

Instructions to make Fresh Guacamole:
  1. Take the 6 avocados, half them around the nut. Take a spoon and pop out the pit into a separate bowl. Take the spoon and carve out all the inside into a big mixing bowl. Repeat for all 12 halves.
  2. Using a masher or forks, mash the guacamole untill the consistency is smoother and not chunky.

  5. Dice the tomatoes and place them into the mixing bowl. Stir the bowl and squeeze another half a line.
  6. Take the large red onion, clean it, remove the tops and first few outer layers. Dice the halves and place the cut onion into the mixing bowl. Stir the onions in with another squeeze half lime.
  7. Take a garlic presser and mince 2-3 large cloves of fresh garlic directly into bowl, and stir.
  8. Take the two seasoning packets and empty them into the bowl. Take another lime, and squeeze half of the juices into the bowl, and stir. Add salt and pepper to taste.
  9. After all the contents are stirred well, take the fresh cilantro and, on a cutting board, remove the stems and chop a handful of it. Place the chopped cilantro in bowl.
  10. Add salt and pepper to taste
  11. (OPTIONAL): if you want a hot guac, take fresh or canned jalapeños and remove all the insides before chopping into very fine and small pieces. Place only a few chopped jalapeños into mix and stir.
  12. As a final touch, take a ¼ cup of fresh OJ and stir it I to the mixing bowl. Add more if needed, without it getting too runny.
  13. Take the last half of lime and squeeze all the juice on the top of the guacamole. In addition, take the pits, clean them, and place them on top of the guac. Cover the bowl and place in fridge to sit for a few hours before serving with good chips or veggies.
  14. Remove pits before serving, and add them back before putting it back in fridge. Add lime juice if guac starts to turn brown after time. Guac should last max 4 days.
