Here are a couple of variations that we like. You can add ½ cup chopped white onion if you like. Add the onion at the same time you add the potatoes and carrots. It's ground beef with tomato, green pepper, green olives and plenty of garlic.

Instructions to make Picadillo:
  1. Put the olive oil in a large, heavy pan set over a medium heat flame and heat until shimmers.
  2. Add onions, chorizo, and garlic and cook until onions are soft (10 min).
  3. Add the ground beef and cook. Season with salt and pepper.
  4. Add tomatoes, vinegar, cinnamon, cumin, bay leaves, cloves and nutmeg. Lower heat and let simmer, covered, for about 30 minutes.
  5. While stew is cooking, cook rice per directions.
  6. Uncover the pan, and add the raisins and olives. Allow to stew for another 15 minutes.
  7. Serve over white rice.
