Don't be afraid to cook your roux - if needs to be cooked slowly to a blonde stage - like Chef John says it will smell like pie crust. Good chicken stock makes a huge difference with this gravy. I did add a pinch of cayenne pepper to the roux along with some white pepper. I like to serve it as a starter but it also makes a great snack.

  1. Marinate the chicken,with ginger garlic paste, soy sauce,add egg beaten and maida or corn flour,deep fry and keep aside
  2. Grind onion,heat oil in a pan add onion paste, tomatoes paste, grind whole Red chilli add to onion and tomatoes cook till oil separates,add haldi salt, Garam masala.
  3. Chop capsicums, add it to the gravy,add fried chicken, cook for 5 min.
