- Make ready 1 small can of pinapple crush (about 1 cup - liquid drained and reserved)
- Take 4 tbsp of the pinapple crush liquid / syrup
- Prepare 1 cup finely sliced coconut
- Get 1/2 cup crushed Pistacios
Instructions; In a large bowl, whisk together the coconut milk, cream and sugar. Stir in the pineapple juice, vanilla extract and pureed pineapples. Pina colada flavors but in ice cream form. Rich coconut, sharp pineapple, smooth cream: we are in business!
Instructions to make Pina Colada Ice Cream:
- In a large mixing bowl, Combine chilled cream and coconut cream. (Omit liquid from coconut cream)
- In a separate bowl, Combine condensed milk and pina colada cocktail mix well then add into cream mixure.
- Whip mixture.
- Fold in pinapple crush, syrup and coconut slices.
- Transfer to freezer safe tupperware.
- Top with crushed pistachios
- Freeze overnight / until set.
- Serve and enjoy 😋
You don't have to share my weakness for a kitsch tipple to enjoy this. Certainly, it helps - but the benefit is psychological not gastronomical. Note: I am afraid desiccated coconut just isn't. Purée pineapple and rum in a blender until smooth. My perfect Piña Colada recipe is not too sweet, refreshing and tastes distinctly like coconut and pineapple.
