The ingredients needed to make Chicken 65:
  1. Get 250 - 300 gms chicken boneless tender
  2. Prepare 1 egg white
  3. Take 2 tsps cornflour
  4. Make ready 1 tsp rice flour
  5. Take oil for deep frying
  6. Make ready 1/2 tsp ginger garlic paste
  7. Make ready 1/2 tsp red chilli powder
  8. Make ready 1 tsp lemon juice
  9. Get 1/2 tsp pepper powder
  10. Get 1/8 tsp turmeric powder
  11. Get to taste salt
  12. Make ready 1/2 tsp cumin powder
  13. Make ready 1/2 tsp chopped garlic
  14. Make ready 1/2 tsp pepper powder
  15. Prepare 2 green chillies
  16. Get curry leaves few
  17. Prepare chicken Seasoning mixture to coat the :
  18. Make ready 3/4 tsp red chilli powder
  19. Take 1/2 tsp sugar
  20. Get 2 cloves garlic
  21. Make ready to taste salt
  22. Prepare 2 tsps vinegar

Add chicken to pan and stir to coat. The ingredients are flexible, so you can use a mixture of cumin, turmeric, coriander, and garam masala, or get more creative, as long as you also include chili powder and a ginger-garlic paste. Cut chicken pieces into cubes of desired size. I made it quite a different ways and posted it here.

Instructions to make Chicken 65:
  1. Wash chicken under running water. Marinate it with marination ingredients. Set arise for at least 45 minutes. Overnight yields the best soft chicken.
  2. Make the seasoning mixture. Add red chilli powder, sugar, garlic paste, salt vinegar with 2 tbsp of water. Set this aside.
  3. Sprinkle the dry flour over the marinated chicken. Pour the egg. Mix well. If needed sprinkle little water for a good binding.
  4. Heat oil in a deep pan until hot enough to fry the chicken, fry till they are cooked fully and golden. Drain them on a kitchen tissue.
  5. Heat the pan with 1 tbsp of oil, add curry leaves, green chillies and cumin, fry till the leaves turn crisp.  You can set aside for garnishing.
  6. Add the seasoning mixture, we prepared above and let it boil.
  7. Add the fried chicken and toss and fry on medium heat till the chicken adsorbs all the moisture and the raw smell of garlic disappears. Serve with onion wedges.

It's a classic south Indian dish which has deep-fried chicken along with other flavourful ingredients, making it a dish worth trying for every spice lover. Some say it originated in Chennai at a small Indian restaurant. It is generally a dry preparation made with boneless chicken. In the restaurants, it is served very hot and spicy, with lemon wedges to reduce and green chillies to enhance the spiciness 🙂.
