- Preheat oven to 350°F/180°C.
- Fold the parchment paper in half, then open up. On one half, lay down the green beans. Drizzle on oil and sprinkle on salt & pepper.
- Lay the salmon on the green beans, and spread on the pesto. Top with tomatoes. Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges.
- Bake for 20 minutes or until internal temperature of salmon reaches 145˚F/63˚C.
Next, combine sun-dried tomatoes, garlic, cashews, olive oil, basil, and salt in a food processor and blend together until you achieve a paste-like consistency (there can still be some chunks). Top rice with salmon fillets; season with salt and pepper, and rub with a drizzle of olive oil. Add a tablespoon of tomato pesto on top and spread it over each fillet. Place a sprig of fresh thyme over each fillet. Lightly oil a cookie sheet or shallow baking dish large enough to hold the salmon and peppers in one layer.
