The ingredients needed to make Tomato bharta:
- Make ready 700 gm tomatoes
- Make ready 150 gm onions ,finely diced
- Get 2 tsp minced garlic
- Prepare 2 tsp ginger paste
- Prepare 1.5 tsp green chillies finely chopped
- Take 1 tsp red chilli powder
- Prepare 1/2 tsp turmeric powder
- Get 1 tsp cumin powder
- Get 1 tsp coriander powder
- Take 1 tsp cumin seeds
- Take 3/4 tsp dry mango powder( amchur )
- Take 3tbsp +extra vegetable oil for frying and coating
- Prepare to taste salt
Leave some lumps of tomato whole while mashing the tomatoes as this will add a nice texture to the bharta. Add chopped chilies, coriander and onion to the tomatoes. Add salt and sugar and mix. Check seasoning and adjust if needed.
Instructions to make Tomato bharta:
- Wash and pat dry the tomatoes. Coat them with oil and roast on an open flame until charred.
- Immediately dip them in a bowl of iced water and set aside for 15-20 minutes.
- Peel and discard the charred skin. Chop the tomatoes into small pieces.
- In a saucepan, on a low flame, heat oil.Add cumin seeds and once they start to splutter add the minced garlic.Saute until slightly toasted.
- Add chopped onions along with ginger garlic paste.Saute until soft and slightly turning brown.
- Add the chopped tomatoes and green chillies along with the remaining ingredients except the dried mango powder. Mix well.
- Cover and let cook on a low flame until the tomatoes are soft and mushy.
- Add the dried mango powder.Mix well.Cook uncovered on medium high flame until all the water evaporates.
- Garnish with chopped coriander leaves and serve hot along with INdian flatbread.
