Grits are to a Southerner what polenta is to an Italian. We love to top them with fried or scrambled eggs along with bacon or ham, sausage gravy, crawfish, grillades or shrimp just to name a few. This is my version of the southern comfort food staple, to be served over stone ground grits. Most of the time here is spent building flavors for the rich, creamy tomato based gravy studded with bacon and chives.

Steps to make Grits, Smoked Sausage, and Tomato Gravy:
  1. Dice the smoked sausage.
  2. Bring the water with the salt to boiling add the diced smoked sausage and 1/2 stick butter.
  3. Add the grits to the water and sausage. Stir leaving no lumps.
  4. Shred the cheese.
  5. Add the cheese to the grits.
  6. Now add the half stick of butter. Cover and let it melt when it has melted stir well. Then cover again.
  7. Heat the oil for the tomatoes. Add the tomatoes, bacon drippings, and salt and pepper.
  8. Bring to a simmer. Add the dehydrated onions.
  9. Simmer for 10 minutes.
  10. Add the flour
  11. Stir adding in the water. Simmer a bit till your desired thickness. Taste adjust salt and pepper to taste
  12. Add the grits to a bowl or plate

This is an update to my original Shrimp & Grits post, with simplified recipe steps and a few ingredient changes. From Huntsville, Alabama, though I learned to make and fell in love with tomato gravy over grits, especially for dinner while living & going to school in Mobile; however, I chop & brown the pork sausage like ground beef then add tomatoes & sausage back once roux is ready. Add the sausage and enough water to cover the sausage at the half-way mark. Cook over medium heat until the water boils down and the sausage browns. Turn over and repeat the browning process.
