The ingredients needed to make Shrimp udon:
  1. Get udon
  2. Make ready mushroom soya sauce
  3. Make ready Housing sauce
  4. Prepare mushroom
  5. Prepare onion
  6. Prepare broccoli

The udon noodles cooked VERY quickly and were too soft, especially compared with the firm shrimp. Need to make sure the noodles are firmer. Also, I would use medium shrimp so I could get a forkful with a shrimp and noodles in each bite. Use the chili oil; this wasn't spicy enough without it.

Steps to make Shrimp udon:
  1. Stir fry veggies then add in shrimp
  2. Boil water, pour over udon, then drain
  3. Add udon to stir fry add mushroom soya sauce and hoisin and sesame oil

Toss in bean sprouts and cook until just starting to wilt. Cook udon in a large pot of boiling salted water according to package directions. This is shrimp and Udon noodle bowl is probably one of my bigger experiments to date! The idea started out as a salad, loosely based on a shrimp and white bean salad I had a few summers ago (stay tuned for a post that actually includes that. The shrimp tempura udon noodle broth was made simply with a little dashi, dried shiitake mushroom broth, tamari (soy) sauce and mirin.
