This dirty rice recipe uses a deliciously spiced homemade cajun seasoning. I find that homemade has so much flavor (and much less salt) but store bought will work too! Brown the sausage making a small crumble mixture in a skillet until cooked through. Stir in the broth, rice and minced onion.

- Saute' peppers, onion, celery, parsley, garlic & jalapenos in butter or bacon drippings for 10-15 minutes.

- Add chicken broth and bring to boil.
- Simmer over low heat for 20-25 minutes.

I created a healthier version using brown rice and lean ground beef in place of the chicken livers that normally make dirty rice "dirty". Traditional Dirty Rice uses chopped chicken livers which gives it a distinctive flavor and a dark color dubbing it "dirty" rice. Chicken giblets are bit rich for my palette and the chicken thighs to me are a better substitute and still make it "dirty". We don't have the same type of sausage (Andouille) that we get in Texas/Louisiana h.
