Instructions to make Baked Sardines:
  1. Preheat oven to about 200 c.
  2. Salt the sardines overnight with rock salt.
  3. Rinse under cold running water.
  4. Then layer sardines in a baking dish and season with black pepper.
  5. Then whisk the olive oil, oregano, thyme, garlic, red pepper flakes or paprika and lemon juice in a small bowl until well combined.
  6. Pour over the sardines and then let it sit for about 30 minutes so the sardines absorb the flavours.
  7. Then transfer the baking dish to the oven and cook for about 20 minutes. Add a splash of water to the dish if it becomes dry at any point.
  8. Serve immediately. Enjoy with some crusty bread.
