The ingredients needed to make 'Somen' & Pork Stir-Fry:
  1. Take 90 g x 4 'Somen' Noodles
  2. Make ready 1 tablespoon Sesame Oil
  3. Make ready 200-300 g Pork *thinly Sliced
  4. Get Salt & White Pepper
  5. Take 1 small piece Ginger * sliced into fine strips
  6. Take 1 Onion
  7. Take 4 Eggs
  8. Get Canola Oil for cooking
  9. Prepare 1/2 cup ‘Mentsuyu’ Noodle Dipping Sauce
  10. Make ready *Note: To make the sauce, mix 1/4 cup Dashi Stock (1/4 cup Water & 1/4 teaspoon Dashi Powder), 1 tablespoon Mirin, 1 tablespoon Sake (Rice Wine), 2 tablespoons Soy Sauce
  11. Take Extra Soy Sauce
  12. Take 3-4 Spring Onion *finely chopped

Cook for a minute and strain. Wash Somen in running water, rubbing. Put ice water in a serving bowl and add Somen. Somen (or sōmen) is a very thin noodles served cold which makes it a perfect summer dish.

Steps to make 'Somen' & Pork Stir-Fry:
  1. Slice Pork very thinly and season with Salt and White Pepper. Lightly whisk Eggs in a bowl and season with Salt and White Pepper. Slice Onion and Ginger into thin strips.
  2. Cook ‘Somen’ Noodles as instructed. DO NOT add Salt into the water. Noodles need to be cooked quite firm as you will stir-fry later. After drained, sprinkle Sesame Oil to stop stick together.
  3. Heat 1 tablespoon Canola Oil in a frying pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
  4. Add 1 tablespoon of Canola Oil to the hot frying pan and cook Pork. When the Pork changes colour, add Onion and Ginger and cook until soft. Add 'Mentsuyu' Sauce, then combine with cooked ‘Somen’ and the egg.
  5. Sprinkle extra Soy Sauce over if required, and some chopped Spring Onion and serve.

Noodles are served in chilled water and the dipping sauce is also chilled. It is a very simple dish but wonderful to pop in between heavy meals to give your stomach a little bit of a rest. Somen are thin wheat noodles that are white in color and have a springy, bouncy texture when cooked al dente.
