- Sprinkle with the grated cheese
- Spread remaining batter over the cheese
- Bake uncovered for 30 to 35 minutes until cornbread is done

- I cup sifted flour..4 teaspoons baking powder. ..1 cup yellow cornmeal… 1 cup milk… 1/4 cup sugar… 3/4 teaspoon salt… 2 eggs…1/4 cup softened shortening
- Sift flour with, baking powder and salt, and sugar. Stir in cornmeal.
- Add eggs, milk and shortening
- Beat until almost smooth, do not over beat
Cover with the meat mixture & then the remaining cornbread batter. Remove from oven and brush melted butter on top of cornbread. Add remaining cheese and continue to cook in oven until cheese melts. Remove from oven and serve with sour cream, sliced avocado and salsa. In a large skillet, heat oil over medium heat.
