- Prepare 750 grams Chicken

- Make ready 5 tbsp Oil + Ghee or more (whatever proportion you like)

- Get 4 Dry red chillies
- Take 5 Green chillies slit
- Make ready 2 springs Curry leaves
- Make ready 1 bunch Coriander leaves chopped
- Take as needed Onion rings
Instructions to make Chicken Pepper Fry:
- Marinate the cleaned chicken pieces with ginger garlic paste, some salt and turmeric for an hour.
- Place the marinated chicken in a pan, and cook in it's own juices on low flame till the chicken is tender and water is reduced. Keep aside. Alternatively you can also pressure cook the chicken with very little water, for 1 whistle.
- Grind the chopped onions, green chilies, ginger and garlic…coarsely …in a mixer-grinder in pulse mode
- Heat oil+Ghee in a flat non-stick pan. Fry the Red and green chillies, and curry leaves and keep aside.
- In the same oil, add the ground paste, a little salt and fry till the oil gets separated. You have to keep stirring and don’t allow the masala to burn or stick to the pan.
- Add turmeric, 1 tsp pepper powder, chilli powder, dhania powder, salt…mix well, and fry for 2 minutes.
- Add the boiled chicken pieces along with stock. Add some more oil/ghee if required. Mix well, cook on slow heat for 8-10 minutes, stirring occasionally, till lightly roasted.
- Sprinkle with remaining pepper powder and garam masala evenly on the fried chicken. Stir fry for another 2 mins.
- Remove the fried chicken into a serving plate and garnish with the chillies, curry leaves, onion rings and coriander.
