Chicken tikka recipe - Tandoori chicken tikka is one of the most popular chicken starter or appetizer from Indian Cuisine. Chicken tikka that is grilled in a tandoor acquires a smoky aroma & enhances the flavors of the meat. Finally a bit of mustard oil is brushed over the tandoori tikkas. This authentic tandoori chicken tikka is succulent and sure to become a family favourite.

Steps to make Tandoori grill chicken tikka:
  1. Clean and wash the chicken and keep it aside. Make cuts on the chicken as shown. This is done so that the masala enters nicely and the chicken gets well marinated.
  2. Take a bowl add yoghurt, ginger garlic paste, zeera powder, dhaniya powder, red chilli powder, garam masala, chaat masala, salt, food colour and lemon juice. Mix all the ingredients nicely.
  3. Take the chicken and start applying the above mixture. Massage the chicken for few minutes so that the masala gets absorbed.
  4. Cover the bowl and refrigerate it. It is advisable to allow marination for abt 7 to 8 hrs or overnight, this gives you a good result and taste.
  5. Take a pan heat it with 1tbsp of olive oil or any cooking oil. Now add the marinated chicken tikka. Cook on high flame for about 4-5 mins. Turn on other side and cook in the same way. (Note: Don't cover the pan with the lid during this process). Apply the remaining masala on the chicken with oil brush and cook.
  6. Now cover the lid and allow the chicken to cook on low flame. Cook on both sides. Tadaa your restaurant style tandoori chicken tikka is ready.
  7. Optional- burn a coal and place it in between the cooked tikka and pour some ghee on the coal and cover it for sometimes.

The key to getting a tandoori taste is to use Greek-style yoghurt Preheat the grill to medium. Thread the chicken onto the skewers. Arrange them on a wire rack.
