- Slice your chicken, put in a tray and into a freezer for like 3 mins to cool(not freeze)
- Put the chicken,grounded nutmeg, ginger, the salt and choppped onions into a blender (i used nutribullet) and pulse for while until its finely done
- Remove from blender, add egg white from the egg and mix well.
- Roll into small balls and arrange in a baking pan and bake for 20min at 180°C
- Fry onions till golden brown, add blended tomatoes and let cook for like 5 mins then add crushed garlic and cook for another 2 min.
- Add your baked chicken balls, let it cook for like 5 minutes and serve with your preferred accompaniment: pasta, matoke,rice etc
Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and scallions, and toss to combine. Place Meatball ingredients in a bowl, mix well. Scoop up a heaped tablespoon, roll into a ball and place on the rack. Mix together the ground chicken, bread crumbs, Parmesan cheese, eggs, Italian seasoning, salt, and pepper in a medium bowl. These baked chicken meatball bites can go with spaghetti and meatballs, baked rigatoni, or any pasta for that matter.
