Hey everyone, it’s me, Dave, welcome to my recipe site. Today, we’re going to make a special dish, steak enchiladas. One of my favorites. This time, I’m gonna make it a bit tasty. This is gonna smell and look delicious.

Our steak enchiladas are an easy and delicious way to put that leftover meat to good use. This easy enchilada recipe is something I know our kids will always love. Real good enchiladas, that's what they call these!

The ingredients needed to make Steak Enchiladas:
  1. Get Corn tortillas
  2. Take 2-3 cups cooked beef steak, I used top sirloin, chopped small
  3. Get Refried beans
  4. Get lEnchilada sauce
  5. Take Shredded cheese

I cooked my beef in a crockpot so that it would be nice and tender and easy to shred. I added all the ingredients to the crock pot: sauted onions garlic peppers tomato sauce chili powder. Place enchiladas seam side down in the prepared baking dish. Heat ¼ cup oil and Tbsp. of enchilada sauce in skillet over MEDIUM heat.

Instructions to make Steak Enchiladas:
  1. Preheat oven to 350. Spray thoroughly a 9x13 baking dish. In a skillet on high heat crisp and brown the steak. I added the drippings from the night before and reduced it.
  2. On a tortilla, put a spoon of beans, a spoon of steak, and a sprinkling of cheese. Roll it up and place seam side down. Continue rolling until your dish is full. Pour sauce over all of it.
  3. I baked it covered for about 30 minutes. Took it out and uncovered it and sprinkled more cheese on top. Returned it to the oven for a few minutes then took it out and let it sit for a bit. Served with sour cream and all the good fixins

Coat bottom of baking pan with enchilada sauce. Roll steak, white onions and cheese into cooled tortilla, tightly lining pan. There is something about juicy meat and cheese wrapped in a tortilla and baked with sauce and more cheese!! I make my Chicken Enchiladas all the time but I wanted to make something different with them last time. I was thinking beef, using ground beef, at first but then I saw this perfect looking steak at the store and it called for me.
