- Add in onions. I also add some green or orange bell peppers for color. Cook about 5 minutes
- Add in squash you may also add some green zucchini for color. Stir and mix well.
- Reduce heat to simmer. Cover with lid and simmer for 25 min stirring occasionally.
- Add another tbsp of butter taste and adjust seasonning to your liking.
- Serve and enjoy!
Instead of salt, use a seasoned salt blend or a bit of Creole or Cajun seasoning. If the seasoning is salt-free, add salt to taste. Use a combination of zucchini and yellow squash or another summer squash of a similar size. Roasting yellow squash with onions gives them a deep, rich, smoky flavor.
