- Dry roast black pepper corns, cloves, bay leaf and black cardamom seeds; cool and grind them into fine powder; set aside.
- Heat oil in a pot, add chicken pieces and fry till it changes colour; take out from loil and set aside.
- In the same oil add sliced onions and fry till it's light golden brown, add ginger garlic paste; saute to remove raw smell, add slices tomatoes and cook till tomatoes dissolve completely, add yogurt and fry masala for few minutes; add chicken pieces, red chilli powder, cumin powder, coriander powder, salt, roasted and ground pieces; mix 2tbsp of ginger julienne, 2-3 green chillies, mix and cook covered till chicken is tender and oil comes up to the surface.
- Add dry fenugreek leaves, cook for 1-2 minutes.
- Finally give coal smoke, garnish with ginger julienne, fresh coriander leaves and green chillies.
