Don't get me wrong, I love traditional ones, particularly my Mum's, but these shortbread jam drop cookies are my all time favorite. Those of you who have been following along might remember I popped up my Cream Cheese Jam Drops a while ago. Cream the sugar, shortening/butter/margarine and vanilla. In a separate bowl, sift the flour, salt and soda and add to the first mixture.

Instructions to make Jam drop cookies:
  1. Gently mix the room temperature butter and powdered Sugar with a wooden spoon or whisk until nice and creamy
  2. Next add in the egg, vanilla essence. Also add in the flour. Mix well until it forms a smooth dough which will be pale yellow in color
  3. Take a small amount of dough (around a teaspoon) and roll into ball shape. Arrange on tray lined with baking sheet and make a small indent in the center of ball with thumb. Fill a little jam in the indent.
  4. Bake at 180C for 20-25 minutes or until firm and slightly golden.

Add the remaining ingredients (except the jam), beating well. Drop by teaspoonfuls on the cookie sheet, about an inch apart. Make well in the center with the back of a small spoon, and fill with strawberry jam. Jam drops are a great lunch box filler. Jam drop biscuits / cookies are a simple cookie, with a jam filled dent in the centre - a little like thumbprint cookies.
