- Chop the cucumber, tomatos and red pepper. Grab your serving dish or tupperware (if for a work lunch) and add the salad leaves, cucumber, tomatos and red pepper. I usually try to keep this salad to one side of the dish.
- Once the couscous is ready add it to the serving dish leaving a space for the potatos still.
- Once the potatos are soft drain well, then in a separate bowl mix with the mayonnaise chives and season to taste. Now add to the remaining space in the serving dish.
- Sprinkle the toasted pine nuts and feta over everything in the serving dish. Serve with a squeeze of lemon.
