  8. Cover and simmer for about 10 to 12 minutes.
  9. After 10-12 minutes remove from heat and let the mixture cool for a while.
  10. Transfer to a blender and blend to smooth puree.
  11. Transfer the puree back to the saucepan, heat again and put some whole sweet corn for some crunch to the soup.
  12. When the soup comes to a boil, remove from heat and transfer to soup bowls.
  13. Garnish with some blanched sweet corn, red bell peppers and olive slices.
